- aggressive (said of young wine or older wine that hasn't mellowed)
- aromatic (plenty of aromas and flowers often the spicy varieties)
- astringent (mouth puckering tannin)
- austere(very tough maybe because the wine is to young)
- baked(as if the grapes had been baked in the sun)
- beefy(full bodied usually red wine)
- coarse(rough and ready)
- creamy (wines of quality like champagne)
- crisp(refreshing especially white wine)
- dense(full colour packed with flavor)
- dried out(over the hill wine usually past its best)
- earthy(earthy mineral smells straight from the soil)
- elegant(self explanatory)
- fat(full bodied maybe sweet)
- finesse(high quality)
- firm(good tannin and or acid)
- flabby(lack of acidity)
- flat(lacking freshness an acid)
- fleshy(good flavor round with no edges)
- forward(more mature than would expect)
- fragrant(usually flowery)
- green(very young and raw or grapes might not have been quite ripe)
- grip(a young wine that has the potential to develop)
- hard(too much tannin or acid)
- heavy(full bodied and alcoholic)
- herby(usually grass or herbs)
- hollow(wine with taste that doesn't last very long)
- hot(high out of balance alcohol)
- jammy(jam flavors)
- lean(lacking flavors)
- long(has a long lasting taste)
- meaty(sometimes savoury meat flavors)
- mouth filling(rich in textures and flavors)
- neutral(short on aroma and flavor)
- oily(some grapes have and oily feel to them)
- penetrating(intense aromas and flavors)
- perfumed(fragrant flowery)
- rich(deep flavors)
- robust(full bodied usually red)
- rough (coarse basic wine)
- round(ready to drink)
- scented(fragrant perfumed)
- sharp(a sharp acid flavor)
- short(no after taste)
- silky(high quality)
- simple(good drinkable wine)
- smooth (applies to texture)
- soft(mellow flavors)
- solid(plenty of substance)
- sour(acidic or vinegary)
- spritz(prickly)
- stalky(bitter taste of stalks and stems)
- stewed(cooked flavors from over ripe grapes)
- stringy(thin wine)
- structure (as in good firm structure)
- supple(round and smooth)
- tangy(lively after taste)
- thin(lacking flavor)
- tough (too much tannin)
- vegetal(brassica rather than leafy)
- velvety(like silky but richer)
- watery(thin and weak)
- woody(smell of old casks)
- zesty(fresh crisp and lively)
